Starlight Distillery is located on the grounds of the Huber family estate in Indiana. Farming began in 1843 when Carl Huber emigrated from Baden-Baden, Germany. Primarily fruit growers, the family opened a winery in 1978 and they began distilling bourbon in 2013.
Starlight, the kings of cask finishing, selects Jamaican Rum barrels specifically, to finish their bourbon. Jamaican Rum brings a unique, funky fresh character to the bourbon.
Nose: Sherry soaked raisins, molasses and a hint of bakers' chocolate.
Palate: Caramel, brown sugar, vanilla and oak spices.
Finish: Long finish that turns dry. Oak spice and brown sugar carry through from the palate.
