Guided by his love for Uisge Beatha (pronounced ooshkih beh-ha) and attaining a PhD in fermentation, founder Graeme Macaloney set out to create fine single malt whisky from a distillery located in Canada’s Vancouver Island. Knowing he could not create a world-class distillery on his own, a skilled team of experts was assembled including: Dr. Jim Swan – the foremost whisky maturation expert in the world; and, Mike Nicolson – master distiller who had worked in over 18 distilleries in all regions of Scotland. In August 2016 the first whisky flowed out of the Forsythe pot stills and into the hand selected barrels chosen by Dr. Swan. Poitín (pronounced poe-teen or poe-cheen) is a traditional Irish spirit most commonly associated with ‘Irish moonshine’ or ‘Irish mountain dew’. In accordance with the Irish Poitín technical file, it can only be distilled in a pot still from cereals, grain, whey, sugar beet, molasses and potatoes – thus ranging in taste from blended whisky to vodka. Traditionally distilled using Irish methods (100% malted Barley) and matured in STR (shave/toast/re-char) Portuguese red wine Barriques, this is the first ever triple-distilled pot still whisky spirit in Canada … and one of the first outside Ireland.
Nose: Apricot, honey, papaya, Christmas cake and milk chocolate.
Palate: Full bodied, creamy, with citrus notes. After exposure to air, the red wine notes become prominent with underlying red berries.
Finish: Short finish with a brief menthol aftertaste.
