Dingle Distillery’s hugely anticipated Core Single Malt has finally been released. This Core Single Malt release has been years in the making and comprises of malt whiskey that has been matured in ex-Bourbon, and PX sherry casks (39% Bourbon, 61% PX Sherry). Under the watchful eye of Master Distiller Graham Coull this whiskey has evolved from the component casks which have come to the fore at different stages. In other words, the calendar does not tell you when the barrels are ready for marrying, the casks themselves do. This expression is non-chill filtered.
Nose: Lime zest, chopped mint, sweet pear
Palate: Caramelised apple, raisins and vanilla
Finish: Honey sweetness, mixed spice lingers on the tongue
