Announcing W&B's newest product release: Bottled-in-Bond American Single Malt Whiskey. It is made from a mash bill of 100% non-GMO malted barley grown in California, Washington and Ireland. The barley was milled, mashed, fermented, distilled, barrel-aged and bottled on site. This one really stands out because it is W&B's oldest whiskey to date - having been barrel aged for the last 4 1/2 years.
A Bottled-in-Bond whiskey must be made by the same distiller, in the same distilling season, aged more than 4 years in oak barrels in a federally bonded warehouse and bottled at 50% alcohol by volume. It is a designation that speaks to artisanal quality, purity and vintage. Distilled in their inaugural batch in 2015, soon after opening for production. Since then it has been resting and maturing in 200-litre charred oak casks. This Single Malt is a true rarity as it represents only the second ever Bottled-in-Bond American Single Malt.
Nose: Heady but pleasant aromatics and a distinct vibrancy meld wonderfully with the warmth of its oak character.
Palate: Mouthfeel is rich and velvety with a distinct maltiness with sweet hints of tea cakes, spice. As it lingers on the tongue there is a caramel and maltiness with notes of dark chocolate and toasted coconut.
Finish: A sweet caramel finish.
