This release is the first Sauternes-matured expression from the distillery. The spirit was initially aged for 5+ years in refill bourbon casks and then finished for an additional 30 months in casks that previously held this iconic French dessert wine. Sauternes is produced through the use of noble rot, a fungus that reduces the water content and thus accentuates the sweetness of the residual sugar. Bearing a dried stone fruit profile, these casks give a wonderfully complex addition to the lightly peated and coastal style of Ardnamurchan.
Nose: A welcoming nose with a malty/yeasty character. Nutty, citrusy and a bit of dunnage must.
Palate: Not overly creamy but still a satisfying mouthfeel. Demerara sugar, dark treacle and a hint of leather.
Finish: Medium length and a noticeable sweetness, but remains balanced.
