Milk & Honey is an urban distillery located in Tel Aviv. M&H is a part of the city’s fabric, among entrepreneurs, innovators, makers and artisans
which is why they chose to build the distillery near the beachfront and amongst the lively markets and architecture. Under the guidance of noted distillery and wood expert Dr. Jim Swan, operations began in 2014 with the first single malt being introduced in May 2017. In a career that spanned more than 40 years, Dr. Jim Swan conducted decades of groundbreaking scientific research and helped dozens of distilleries take their first steps towards making whisky. Described as ‘the Einstein of whisky’ and ‘the ultimate whisky troubleshooter’, his roots lay in Scotch, but he shared his expertise and encouragement with distilleries all over the world including: Kilchoman, Clydeside and Annandale in Scotland, Dublin Whiskey Distillery in Ireland, The London Distillery, Cotswold and St George’s in England, Victoria Caledonian in Canada, Amrut in India and many more. Adhering to strict Scottish distilling practices, M&H use a long fermentation time before twice distilling in a 9000 litre wash still and a 3500 litre spirit still. And because of Israel’s climate the whisky matures gracefully but at a much faster rate. Taking advantage of Israel’s unique geographical features, stock has also been laid down near the Dead Sea – making it the first whisky to be aged over 1400 feet below sea level.
