Ireland's Waterford Distillery was founded in 2015 by Mark Reynier, formerly the co-owner of Bruichladdich. Interestingly, the distillery is
actually a converted brewery which had previously produced Guinness stout. These days, whiskey is the drink of choice at Waterford, with a focus on local barley, showing just how much it impacts the final spirit. Reynier and his team work with a host of local farms to create single-origin-farm Irish whiskeys, many of which debuted in 2020.
