Proof and Wood is a newer producer in Bardstown, Kentucky. The name comes from the two variables that an independent bottler can control; namely, the wood used to age and finish the spirit and the proof strength at which the whiskey is bottled. Proof and Wood's whiskey portfolio runs the gamut from high-end limited-release bottles for collectors to value-focused bottles that deliver high-quality, award-winning spirits at reasonable prices.
The Representative is a medium-rye bourbon produced at Ross & Squibs (formerly MGP) in Indiana and aged for four years. Or as they put it ... two Congressional terms.
Mashbill: 75% Corn, 21% Rye and 4% Malted Barley
Nose: Rich with strong notes of vanilla, underpinned by stone fruits..
Palate: Creamy and viscous mouthfeel, citrus, leather and a spicy character that perfectly balances the sweetness of the corn.
Finish: Long with vanilla carrying through from the nose. The lingering rye spice adds to the warmth and complexity.
