In 2015, Still Austin Whiskey became the city’s first whiskey distillery since Prohibition. As a grain-to-glass distillery, it makes its product
in-house from milling and mashing and fermenting to distilling, barreling and bottling. As well, ingredients are locally sourced from Texas farmers. Because Still Austin is an independent craft whiskey distillery, it can focus on a true grain-to-glass concept that produces the highest quality whiskey by perfecting every part of the process and using local resources and sustainable practices. The team is committed to carrying out each part of the process in-house. That means never sourcing whiskey from another distillery, choosing instead to always manage all aspects of whisky production in-house.
